Section 410IAC7-24-306. Ventilation hood systems; drip prevention

(a) Exhaust ventilation hood systems in food preparation and warewashing areas, including components, such as hoods, fans, guards, and ducting, shall be designed to prevent grease or condensation from draining or dripping onto the following:
(1) Food.
(2) Equipment.
(3) Utensils.
(4) Linens.
(5) Single-service and single-use articles.
(b) For purposes of this section, a violation of subsection (a) is a noncritical item.
