Section 410IAC7-24-151. Pasteurized eggs; substitute for raw shell eggs for certain recipes

(a) Pasteurized eggs or egg products shall be substituted for raw shell eggs in the preparation of foods, such as caesar salad, hollandaise or béarnaise sauce, mayonnaise, and egg-fortified beverages that are not:
(1) cooked as specified under section 182(a)(1) or 182(a)(2) of this rule; or
(2) included in section 182(d) of this rule.
(b) For purposes of this section, a violation of subsection (a) is a critical item.
