Section 410IAC7-24-259. Cooling, heating, and holding capacities

  •    (a) Equipment for cooling and heating food and holding cold and hot food shall be sufficient in number and capacity to provide food temperatures as specified under section 139 through 160, 162 through 167, 169 through 183, 185 through 191, 193 through 200, 203, 234, 236, 245 through 247, or 249 of this rule.

      (b) For purposes of this section, a violation of subsection (a) is a noncritical item.
