Rule 410IAC7-24. Sanitary Standards for the Operation of Retail Food Establishments |
Section 410IAC7-24-239. Equipment, utensils, and linens

(a) Except as specified in subsection (c), cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored as follows:
(1) In a clean, dry location.
(2) Where they are not exposed to splash, dust, or other contamination.
(3) At least six (6) inches above the floor.
(4) In a manner to prevent overcrowding.
(b) Clean equipment and utensils shall be stored as follows:
(1) As specified in subsection (a).
(2) In a self-draining position that allows air drying.
(3) Covered or inverted.
(c) Items that are kept in closed packages may be stored less than six (6) inches above the floor on the following:
(1) Dollies.
(2) Pallets.
(3) Racks.
(4) Skids.
(d) For purposes of this section, a violation of subsection (a), (b), or (c) is a noncritical item.
