Section 410IAC7-24-269. Warewashing equipment requirements

(a) A retail food establishment shall be equipped with at least one (1) of the following options for purposes of washing, rinsing, and sanitizing of equipment and utensils:
(1) Manual warewashing equipment as specified in section 270 of this rule.
(2) A warewashing machine.
(b) The warewashing equipment or machine must be used in accordance with this rule.
(c) For purposes of this section, a violation of subsection (a) or (b) is a critical item.
