Section 345IAC8-3-12. Components of Grade A dairy products

  •    (a) Powdered dairy blends may be labeled Grade A and used as ingredients in Grade A dairy products only if they meet the requirements of this rule. If a powdered blend is to be used as an ingredient in the production of a Grade A product, the following apply:

    (1) The blend must be labeled Grade A.

    (2) The plant where the Grade A powders are manufactured must meet the requirements in 345 IAC 8-2-1.9 or IC 15-18-1-24.

    (3) The plant where the powders are blended must meet the requirements in 345 IAC 8-2-1.9 or IC 15-18-1-24.

      (b) Blends of dairy powders that are used as an ingredient in Grade A milk products must be blended under conditions that meet all of the requirements for production of Grade A milk products in this rule.

      (c) Grade A powder blends must be made from Grade A powdered dairy products. Small amounts of functional ingredients that are not Grade A, however, are allowed in Grade A blends when the finished ingredient is not available in Grade A form, for example, sodium caseinate. For the purpose of this subsection, "small amounts" means the total amount of the ingredient may not exceed five percent (5%) by weight of the finished blend.
